The Cabrillo College Kitchen Lab and Edible Landscaping class emphasize the full cycle of food—growing, processing, and understanding its impact on health, sustainability, and community. By integrating hands-on learning in both the garden and kitchen, students gain a deeper appreciation for where food comes from and how to prepare it with minimal waste. This holistic approach fosters environmental stewardship, culinary skills, and a stronger connection between food systems and local ecosystems.

Pack It In, Pack It Out - Chef List
Partnering with Cabrillo College Horticulture Kitchen Lab

As we build toward a fully functional kitchen lab by January 2026, we are implementing a Pack It In, Pack It Out approach to minimize waste and promote sustainable kitchen practices. Below is a guide for chefs, instructors, and participants using the kitchen lab.


Waste & Composting Guidelines

🔄 Pack It In, Pack It Out – Bring only what you need & take non-compostable waste with you.
Composting Food Scraps

  • Food scraps bin available at the 5000 entrance.

  • Lettuce & produce trimmings can go into the worm composting bins in West Shade (nursery).


Sustainable & Responsible Kitchen Practices

🥕 Prioritize Locally Sourced Ingredients – Support local farms & minimize packaging waste.
🛍️ Use Reusable Containers – Bring ingredients in reusable containers rather than single-use plastic.
🌱 Minimal Food Waste Cooking – Plan portions carefully & save vegetable scraps for stock or composting.
🍽️ Clean & ReturnLeave the kitchen space as you found it (or better).

  • Wash, dry, and put away all borrowed dishware & utensils.

  • Wipe down surfaces and dispose of waste properly.
